Production technology: The free-run must obtained from a soft pressing
soft pressing is placed in steel tanks where cold static decantation takes place
Fermentation: by selected yeasts, it is conducted at a constant temperature of 18°C and finishes in 8-10 days, followed by a second re-fermentation in autoclaves using the charmat method
Alcool: 11,50 %
Serving temperature: 10°/12°

Tasting notes: Pale straw yellow color with perlage fine and persistent, flavour with hints of acacia and wisteria flowers, taste is fresh well balanced on the palate from a pleasant sour note
